What Louis Armstrong was to jazz, Paul Prudhomme was to Louisiana cooking. His legacy lives on at K-Paul’s Louisiana Kitchen, the comfortable French Quarter cafe he opened with his wife Kay in 1979. With five popular TV shows and 11 cookbooks, Chef Paul has been credited with starting the Cajun craze.
