Chef Ron’s Pecan Pie

Congratulations to Chef Ron's Gumbo Stop for being voted "Best Gumbo" and one of the "Best Metairie Restaurants" by the readers of Gambit. You know, nothing tastes better after a savory bowl of gumbo than something sweet. Chef Ron Iafrate's Pecan Pie is just the trick. You’ll also find Chef Ron’s recipe for Turkey Sausage Gumbo here.

Ingredients:

  • 4 eggs
  • I cup sugar
  • ¾ cup light corn syrup
  • 5 tablespoons melted butter
  • 1 teaspoon vanilla
  • 1 teaspoon dark rum (optional)
  • ½ teaspoon salt
  • 2 cups pecans
  • 1 prepared 8-inch pie shell
  • Whip cream
  • Berries

Directions:

  1. Preheat oven to 375.
  2. Crack 4 eggs.
  3. Reserve one yolk and brush on crust.
  4. Combine remaining eggs with all ingredients and mix well.
  5. Pour into prepared 8-inch pie shell.
  6. Bake for 30 to 40 minutes and let cool.
  7. Slice pie into 8 even slices.
  8. If desired, top with whip cream and berries.
