Felix’s Grilled Mahi Mahi

Everyone knows you can’t go to the New Orleans French Quarter without stopping at Felix’s Restaurant & Oyster Bar. This season, they’re offering up some Summer Features, including Grilled Mahi Mahi. If you can’t get your Felix’s fix anytime soon, make this recipe at home.

Ingredients:

  • 1 7-ounce piece of fresh mahi mahi
  • 2 ounces of char butter
  • Salt and pepper
  • 1 ounce of teriyaki glaze
  • 4 ounces of coconut rice (see below)
  • 1 ounce small dice of mango
  • 1 ounce small dice of pineapple
  • 1 ounce small dice of avocado
  • 3 tear drop peppers
  • 1 ounce of smoked peach jam
  • 1 pinch of micro cilantro

Directions:

  1. Season mahi mahi with salt and pepper.
  2. Put char butter on the hot part of the flat top.
  3. Sear and cook mahi on one side for 4 minutes.
  4. Flip over and cook the other side for 4 minutes.
  5. Brush on teriyaki glaze on presentation side.
  6. Take off heat.
  7. In the meantime, in a bowl, mix in your mango, pineapple, avocado, tear drop peppers and peach jam.
  8. Season with salt and pepper.
  9. Heat up your coconut rice to order.
  10. Plating: rice on the bottom.
  11. Place your grilled fish on top.
  12. Then add your mango and pineapple salsa with tear drop peppers.
  13. Add a pinch of micro cilantro.

Ingredients for Coconut Rice:

  • 1 cup of cooked white rice
  • ¼ cup of coconut milk
  • 1 teaspoon of cinnamon powder

Directions:

  1. Put rice, coconut milk, and cinnamon in a sauté pan.
  2. Bring to a boil.
  3. Slightly turn to make sure the mixture is hot.
