Born on the tiny island of Mauritius in the Indian Ocean, Chef Dominique Macquet brings a world of experience to his kitchen, having honed his culinary style working all over the globe before finding his place in New Orleans. Throughout his illustrious career, Chef Dominique has received recognition and his high honors including "Best New Restaurant" in both Esquire and Bon Appetite magazines as well as the DiRoNa Award for "One of the Best Restaurants in North America". Chef Macquet was honored by the James Beard Foundation in "The Great Chefs of America Series" and named "Chef of the Year" by New Orleans Magazine. Chef Dominique has prepared dinner for Nelson Mandela, and has enjoyed the privilege of Guest Chef at the White House, preparing dinner for President Bush and Prime Minister Tony Blair. Having created a culinary following for himself at his name-sake restaurant in the French Quarter, Chef Dominique now extends his vision for light, fresh flavor to his newest venture-Bistro 38 by Dominique. Trained in classic French cooking and well versed in California cuisine, this menu brings not only Country French Cuisine, but a global experience to Metairie.
Chef Adrian Cordes has crafted his skills on the gulf and west coasts. Completing his culinary training at the New Orleans Vocational and Technical School, Chef Cordes fine tuned his love of Mediterranean cuisine at the Culinary Institute of America at Greystone. Focusing building his expertise in classic preparation, Chef Cordes held key positions in some of the finest establishments in both Louisiana and Texas, including The Food Works Cafe', Eatzi's, Hotel Crescent Court, The Windsor Court, Christian's Restaurant and the Southern Yacht Club. Just prior to Hurricane Katrina, Cordes held the position of Executive Chef at the Wyndham Metairie Hotel. Chef Cordes has taken on the incredible challenge of the inaugural Executive Chef of the New Orleans Marriott at Metairie at Lakeway. "Working with Chef Dominiques in developing the personality of Bistro 38 by Dominique had been an honor and incredible learning experience" says Chef Cordes. "We feel we have created an atmosphere and menu that the Jefferson Parish Community and our hotel guest will appreciate". Chef Cordes' passion for fine food and love of the area is reflected in thje creative and outstanding menus throughout the hotel.
