Antoine's has given the dining world many famous dishes. Jules Alciatore had developed a sauce so rich that it defied comparison anywhere in the world. His Oysters Rockefeller sauce was named for the Rockefeller family, the richest in flavour in the world at that time. They remain one of the great culinary creations of all time and that recipe remains a closely-guarded Antoine's secret though it has been imitated countless times.
Antoine's has also perpetuated the Pommes de terre souffles - those marvelous puffed potatoes, and Pompano en papillote - fish in a parchment bag cooked in a special wine sauce.
French was the language of Antoine Alciatore and it remains the language of his restaurant today. We invite you to enjoy the delicious and exciting dishes served at Antoine's!
